Well, meshing is the less problem here, this is a severe nonlinear advanced problem with contact + nonlinear material + nonlinear geometric large displacement effect + allow element rupture, then the solution is complex: of course, solid hex 20-nodes elements is your target (and better 27-nodes using ELCV=1 flag), try to mesh with the best element quality as possible to assure a good convergence of the solution, OK?.

Element rupture would be incredible if I can apply that. But when I see all the options in analysis set manager, I am getting a headache. I don't know where to start actually.
