You cannot turn curves into text currently.

I don't understand the question. Text has a specific font and other characteristics. You cannot select random lines and arcs and turn it in to "text" 

If you have some curves, and you want to machine them the same way we do text, then use surface contouring with the Point/Curve drive method. Select the curves you want to machine connected, then add new set (MB2) when you want to life, and select the next curves. Selection intent gives you many ways to select the curves in each set.
