Have you already tried fixed contour with drive curve?

If you use Surface Contouring with Curve/Point drive method, and NO part geoemtry, the tool should follow the curves as you show.

Hm.... My chance to understand topic starter, I will use telepathy.

If you see a picture - topicstarter want ZIG-ZAG. In this case - Variable Contour, Surface Area as drive method. Surface? Extrude 3D spline or Swept, Or By curves, etc - depends what topic sterter want.

I can get Zig by turning on multiple depths. The trick is that this requires part geometry, so you need to also select the spline as part.

Or extrude this spline in Z direction and use this Surface as Surface Area drive geometry with option Tool On, no part, zigzag..
