Hi All,
I am trying to do a proper ellipse callout using NX11 Drafting as shown...I used the ellipse feature in the sketch, but the ellipse callout is tricky in the drafting.
So I am wondering how to do a radius callout that also shows its center.

That looks like how ellipses were drawn back in the "pencil & paper" days, where you used a compass (if you didn't have an ellipse template). Especially the "large" radius dimension (with the center outside the ellipse)
Mathematically, whne that was done, the result is not an ellipse (it is an approximation).
But IANAD (I am not a drafter) so I don't know how ellipses are supposed to be dimensioned in the various standards (ISO/ASME/DIN/etc.)
What drafting standard are you using?

Just an FYI, you won't see the "Radius to Center" option when using the Radial command to dimension an ellipse (conic).
I suspect you'll also struggle to get the actual Radius value you're looking for since the value will be different as you pick along the curve of the ellipse. You also won't be able to place a 'Center Mark' centerline per your image.
