Exit & save changes, then Undo?
(although you might then have to wait for the model to update...twice)

If you use the sketch environment, you can go to Task -> exit sketch.
I don't use "direct sketch", but I assume there is a similar option there.

Clicking "Finish Sketch" then Undo does work, but I was hoping for something more direct, lilke "Exit Sketch," which doesn't appear to be available in the modeling environment. Not sure why. I guess I'll do the other for now.
As @cowski1 mentioned, you can use Sketch in Task Environment and use Task > Exit Sketch to discard the changes.
If you have a sketch present already, Just use Edit with Rollback..Do the changes and use Task >Exit Sketch to discard the changes. If you use Edit option you have to end up with Finish Sketch option. Task tab will available only if you use Edit with Rollback.
In the sketch task environment you can choose exit from the file menu.
In direct sketch, where you sketch directly in the modleing environment you can use undo (just like when you are creating and editing features). You can undo any operation you did, even entering the sketch. Just go back in time. The undo menu (under the undo button) will allow you to undo multiple actions in a single operation. Just choose "enter direct sketch".
