How do I draw in an architect scale, i.e. 1/4" = 1'-0"

You will have to convert this to a fraction (1/48) and place it in the Scale
box as such.

I found an old post of mine on this that may be valuable:
Most people, particularly those familiar with AutoCAD find it easiest to
draw at full scale. To do this, you work on the "2D Model" tab found at the
bottom of your drawing sheet tabs. If you don't have one called 2D Model,
then go to the View menu and check the "2D Model" item. This will cause a
tab (like Excel) to appear at the bottom of your window. Click this to go
work on the 2D model.
Then, I'd go to File --> Properties -- Units Tab, where I'd set my units to
feet and my area units to sq. ft. (you can save this off later as a template
so you don't have to do this again, but for now, I'd just learn a little at
a time).
Now choose "File --> Drawing Area Setup". This is a wizard that will help
you with setting this up right. First select the size paper you are going to
print to up in the upper right -- for example C -wide. Then set the scale -
You should key in 48 for the scale (12/.250) and then hit the arrow
underneath it. This will compute the overall height/width of your working
area. For example, if you choose a C-wide sheet and 48 scale, you can fit
something 88x64 ft on that C page at 1/4"=1'.Hit OK.
Now, you will see if you draw a line that it will be about 10 or 20 feet
long or some such thing (look at the dynamic readout as you draw).
Once you finish your work, if you print it out at 1/48 scale, it will come
out on the C size sheet as a perfect 1/4"=1'.
You probably want to set up a dimensioning style for architectural -- Solid
Edge is a mechanical program so it doesn't come with built in arch styles.
We can walk you through the setup of that some time if you like.
